Oct 06 SAUCY PRAWNS GIVE A FLAVOUR OF THINGS TO COME

A new company has been launched called Seafood Flavours Ltd to produce portion controlled sauce-coated seafoods in a variety of exciting flavours.

During the coming months, the company will be targeting pub chains, hotel groups, fast food sectors, retailers and supermarkets to promote the service with a number of seasonal offerings. These include mouth-watering ‘brandy butter’ sauced prawns and ‘champagne’ battered prawns. In addition to its Christmas fare, Seafood Flavours has also developed a standard product range consisting of sauce coated, battered and breaded prawns, including sauce coated ‘garlic and herb’,  battered ‘garlic and cracked-back pepper’ and breaded ‘Cajun & Creole’.

In addition to the uniquely produced flavoured variety, Seafoods Flavours also offer an array of filo, torpedo and butterfly king prawns to complete the range.

In view of the severe shortage problems the Scampi market is currently experiencing, due to a reduction in landings caused by bad weather and a change in spawning patterns, Seafood Flavours believes the battered and breaded King Prawns are a cost effective, quality alternative.

One of the benefits of the unique process is that the prawns are individually coated and frozen enabling the user to take them straight from the freezer in their required portion size. For ultimate convenience and flexibility the sauce coated prawns can be pan fried, microwaved or oven baked from frozen. This method eliminates the need to defrost and deglaze the prawns prior to cooking therefore improving on yields and cutting out any potential spoilage or wastage.

Seafood Flavours only uses prawns which are supplied from sustainable sources and are processed in BRC approved factories. Accolade Food Manufacturers Ltd has been contracted in the UK to coat the prawns at its BRC accredited factory, based at the North Wall in Grimsby.

The new company is the brainchild of its directors Dave Pinkney, who has been involved in the prawn industry for many years, and Mark Eland, who has extensive knowledge of seafood production.

Commenting, Mark Eland, says: "The system perfected by Seafood Flavours enables just the right amount of coating to be applied and if necessary with multiple coatings. This means there is virtually no wastage of the sauce and because we can apply if necessary down to just one mm of dressing, very accurate portion control is maintained throughout the entire process. "
